Ingredients:
- 12 chicken mid-wings
- 2 tbsp oil
- 2 slices ginger
- 1 can soda
- 1/4 cup light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar
- 1 tsp Shaoxing wine
- 2 scallions, chopped
Directions:
- Heat a wok or large deep skillet over medium-high heat. Add oil and ginger. Sear the chicken wings until they are golden brown on each side but not cooked through, about 3 minutes each side. Pour in the light soy sauce, dark soy sauce, the wine, Coke and sugar and bring the liquid to a simmer. Simmer the wings uncovered for 15 to 20 minutes, until the liquid is reduced to a glaze.
- Transfer the chicken to a plate, garnish with scallions, and serve.
